What are some examples of people seeking good things that ultimately cause them to miss the best things?

What if it's not about making a marked decision to leave all and follow Jesus - what if we completely miss the invitation because we're so distracted by worldly things? Do you think God will give us a second chance or do you think that's it - we just plain missed it?
I think you make a very important point in that many of the things that tempt us most seriously are subtle things that often go unnoticed--like a slow shift of life priorities until financial security is the number one goal--and maybe under the guise of "just providing for our family" or something like that.
As far as second chances, this is an important and hard-to-answer question. On one hand, God doesn't say to us, "I gave you a chance to get your life together five years ago, but you didn't do what you should have. So don't come crying to me now. The door is closed." God is constantly waiting to receive us to bring us into his family.
On the other hand, one point made very clear by Jesus in many of his parables, (in Matt. 13 and 25, and Luke 12 for example) is that there will come a point in the future when it is too late--a point where all decisions will have been made. But then maybe that will be the point when God, in his foreknowledge, knows that all the people who are going to make the right decision already have.
With all this in mind, I love the quote from C.S. Lewis in The Great Divorce: "In the end there will only be two kinds of people. Those who say to God, 'Thy will be done.' And those to whom God says, in the end, 'Thy will be done.' "
